Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa in the Summer of 2007
This first fill Oloroso sherry butt was the pick of the LMDW team. It was distilled in our Summer season being filled on the 8th July 2009 and has been bottled exclusively for La Maison du Whisky.

Nose: a rather organic and rugged sherry style, dry earthiness with natural rubber, treacle, salted almonds and cocoa powder. Also softer leafy tones and old leather. Quite detailed and intricate in style. Water brings a richer and more emphatic earthiness along with deep tobacco notes, date molasses and a little couch medicine.

Palate: bigger and more powerful than the nose suggests. Notes of clove, dark chocolate with sea salt, hardwood resins, camphor and sultana stewed in Armagnac. In time, it becomes increasingly thick and resinous, showing great development. With water it is finely focused on leaf mulch, tobacco, cocoa and damp, thick earthiness.

Finish: long, wonderfully mentholic, syrupy dark fruit sweetness and some robustly spicy notes of black pepper and clove.
