Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa in the Summer of 2007
This first fill Bourbon barrel was selected by Francis Cuthbert from Daftmill and Jonny McMillan from BB&R.
It was distilled in our summer season being filled on the 27th July 2009 and has been bottled exclusively for the United Kingdom

Tasting Notes

Nose: a green and super fresh profile, focused more than usual on cut grass, wildflowers, warm greenhouses and things like pollens, bread dough and undergrowth. A superbly natural and evocative profile. Water brings more cereals, white pepper, breads and notes of crushed oatcake and pressed flowers.

Palate: once again a firmer and leaner profile that remains fresh with lots of orchard and green fruits, pollen-heavy flowers in bloom, grassy olive oil and notes of slightly tannic fruit teas. Feels tautly structured in the mouth and wonderfully crisp and poised. With water there are sweeter cereal notes such as flapjack with dried apricot and barley water.

Finish: long, crisp and richly bready, with various beer notes, hops and white flowers in the aftertaste.
