Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The Ceres Inn has sat proudly at the heart of the historic village for 300 years. In days of yore it became a favourite resting place for travellers to St Andrews over “The Pilgrim’s Way”.
Nowadays it performs an important role as a village hub within a vibrant community. The Inn enjoys a close relationship with Ceres Highland Games, the oldest “free games” in Scotland.
This cask 008/2008 was picked to mark the 300th anniversary year.
Tasting Notes
Nose: an immediate summery sweetness that incorporates baked apples, custard, sultanas and flower honeys. Some more assertive cask sweetness at the fore, which opens up with time towards sultanas, sauternes and menthol sweets. Water brings brighter fruit notes of yellow plum, white flowers, mango syrup and some rich tones of olive oil and fresh bread.
Palate: rich and sweet with many natural herbal extracts. Soft grassy tones, olive oil cake, brioche, flower honey and golden sultanas. A thicker and more wood-forwards expression but one which shows layered depth and complexity. Water reveals a beautifully balanced profile that matches cask sweetness with many flower pollens, sultanas, ripe orchard fruits and some greener and grassier tones.
Finish: medium, grassy, richly bready and once again on sultana notes with some chamomile, olive oil and dried flowers.
