Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our South fields and harvested in the last week of August 2006. It was then malted stored on the farm to be malted in Alloa during the summer of 2007.
This first fill bourbon barrel was selected by the guys at Whiskybase.
It was distilled in our Winter season being filled on the 14th April 2008 and has been bottled exclusively for the members of Whiskybase.com

Tasting Notes

Nose: an initial flourish of creamy vanilla, then starchy linens, soda bread, cereals and olive oil. Rich and satisfyingly complex. Continues along these themes with further notes of sunflower seeds, fruity trail mix and gorse flower. Water brings a slightly more scented and floral profile, but also neat notes of cut green apple and miso.

Palate: a little sweeter than the nose suggested with boiled lime sweets, pineapple and tiny hints of marzipan. Behind that are firmer notes of toasted cereals, white pepper and milk stout. Rich and satisfyingly ‘present’ in the mouth. With water it has more malty richness and backbone. A biscuity sweetness with dried flowers and lemon-infused fruit teas.

Finish: good length, elegantly drying, focused once again on clean cereal, starches, white flowers, pollens and linens. Globally a very elegant profile Daftmill.
