Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the Summer of 2007
This first fill Oloroso butt was selected by Jonny McMillan from BB&R. It was distilled in our summer season being filled on the 8th July 2009 and has been matured on the ground floor of the dunnage warehouse at Daftmill until it was bottled for the UK.
Tasting Notes
Nose: very focussed on dark, sticky fruits such as prunes and figs in syrup, but this is balanced by deeper earth and meaty tones such as game meats with hints of rancio. A big and hearty sherry that displays excellent balance. Water makes it even more leathery and thick, with more dark fruit and game meat impressions.
Palate: also opens on dark fruits and this feeling of concentration and richness, but reveals more richly meaty, gamey notes, fruit gravy and slightly salted liquorice. A somewhat older style of sherry in many ways. Water brings out a touch more wood spice, but also saltier and sharper tones, big notes of salted almonds, liquorice and toasted walnuts.
Finish: long, salty, earthy and rich with more of these great old oloroso and walnutty notes.
