Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and was harvested by John and Sandy on the 28th & 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
The whisky that went into this bottling came from twenty-five first fill ex bourbon barrels, which were filled in November and December 2010. Then stored in our dunnage warehouse until bottling in 2023.

Tasting Notes

Nose: very classical Daftmill with distillery character front and centre. A lot of freshly mown grass, green herbs, crushed nettles and plenty of typical yellow and green fruits. Also some flowers and their pollens.

Palate: a good balance of sweetness with fruits, citrus curds and custard, along with slightly drier tones of fruit teas, chamomile and linseed oil. A very easy and sippable profile.

Finish: medium in length, with a good balance of sweetness and dryness and elegant floral notes.
