Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first fill ex bourbon barrel was picked for Japan. It was distilled in our Winter season being filled on the 31st December 2010 and has been matured on the ground floor of the warehouse at Daftmill before being bottled exclusively for Japan.

Tasting Notes

Nose: a gently drying and elegant profile, with shoe polish, cereals, dried flowers and hints of face cream about the nose. Water brings out notes of crushed flower stems and things like turmeric and fennel seed. Aromatically complex but overall a more dry profile.

Palate: similarly big, slightly sweeter, on many cereals, beers and dry pollens with hints of bitter hops and malt extract. Weighty in the mouth and complex. Water adds a touch of sweetness, but there are still man deeper earthy, malty and cereal notes with beers and earthy turmeric once again.

Finish: medium in length, returning to a drier, more cereal and malt-driven aftertaste with more hops and turmeric notes.
