Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was distilled in our summer season being filled on the 2nd August 2011 and has been bottled in Jan 2024 exclusively for The Netherlands, Craft Spirits Company.

Tasting Notes

Nose: familiar juicy and bright yellow fruits, balanced by slightly dustier and more floral notes of pollens. Then juniper and aniseed notes with an elegant thread of honey running throughout. Water enhances the floral aspects, while bringing impressions of clay and sunflower oil.
Palate: notes of plum kirsch, peach yogurt and sweet granola, with lighter inclusions of citrus rinds, cut grass and limoncello. Bright, well-balanced and playful. Water softens everything and brings out the easy sweetness of jelly beans, pineapple chunks and fruit salad juices.
Finish: good length, with more flowers, fruit teas, grassy freshness and some nicely peppery notes.
