Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was selected by The Nectar. It was distilled in our summer season being filled on the 10th August 2011 and has been bottled in Jan 2024 exclusively for The Nectar.

Tasting Notes

Nose: very focussed on flower honeys, malt extract, soft amber beers, freshy baked bread and slightly exotic hints of hops and citrus rinds. Beneath that a slight impression of shoe leather and putty suggests body. Water brings wonderful aromatic notes of lemon oil, bay leaf, quinine and muddled green herbs.
Palate: fruit syrups and cordials, strong notes of herbal teas, wormwood and richer impressions of camphor, waxes, shoe polish and mineral oil. Fruity, thick and full-bodied for a Daftmill. With water it becomes softer, lighter bodied, sweeter and develops more towards core cereal notes, white pepper and jasmine flower.
Finish: medium in length, on extractive fruit teas, honeycomb and white pepper spiciness.
