Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
Harvested from the farm’s Dam Park and Curling Pond fields on 31st August 2004, the Chariot barley was among the last to be malted in Fife by Robert Kilgour & Co before they closed.
This first fill bourbon barrel was filled on the 12th July 2006 and bottled in 2019 for the United Kingdom.
Tasting Notes
Nose: a leafy and very fresh profile of sherry, which also begins to express notes of lemon peel, bergamot and Earl Grey tea. Spiced orange liqueurs, dark grained breads, heather ales and treacle. A highly aromatic and intricate style of sherry. With water there’s orange blossom along with mineral oils, praline, brown bread and new leather.
Palate: wonderfully syrupy in texture upon arrival in the mouth. Herbal wines, orange bitters, bouillon stocks, salted caramel and more of these usual damp tobacco, dark chocolate and fir wood resin notes. Water unveils more lean and drying tones which are earthy, leafy and leathery. An elegant herbal bitterness and precise, warming peppery notes.
Finish: long, herbal, full of rich bread notes, bitter cocoa powder, dark beers and spiced teas.
