Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa in the Summer of 2007
This first fill Oloroso butt was selected by Kirsch Import.
It was distilled in our summer season being filled on the 7th July 2009 and has been bottled exclusively for Germany.

Tasting Notes

Nose: an upfront display of jammy fruits, plum eau de vie, flower nectar and golden syrup. Beyond that there are also some cherry cough syrups, candied hazelnuts and hints of sweet cream sherry. With water it becomes much softer, taking on notes of herbal and mixed fruit teas, jasmine flowers and soft hessian notes.

Palate: rather powerful initially, prickling with wood spices, dates, bitter chocolate, espresso and Irish coffee. There are still many impressions of fruit eau de vies which keeps the palate fresh, fruity and vibrant. With water it retains this elegant, fruity sweetness but takes on some richer tones of dried figs, dark rye breads, heather beers and dark chocolate.

Finish: long and chewy. Many impressions of leather, cocoa, hessian and rich, damp tobaccos.
