Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa.
This first fill ex Bourbon Barrel from Clermont KY was selected by Jarek Buss & Son for Poland. It was distilled in our Summer season being filled on the 8th July 2009.
Tudor House will donate a portion of proceeds from the sale of this bottle to the charity Solidarni z Ukrainą.

Tasting Notes

Nose: a gentler and more nuanced cask, with upfront notes of sandalwood and subtle green fruits. Beyond that shoe polish, sun cream and delicate grassiness. A very subtle and delicate example. Water makes it fatter and richer overall, bringing out more honey, cereals and malty richness.

Palate: a surprising burst of sweetness is followed by many subtle yellow fruits with hints of custard and creme brûlée. Also lemon jelly and hibiscus before some more herbal notes such as eucalyptus. Water does a similar trick to the nose, making this a bigger and more emphatic dram, with lemon curd, dried flowers and sweet oils.

Finish: medium in length, but showing lovely sweetness and concentration with malty sweetness and mead in the aftertaste.
