Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
This bottling is for the members of the Facebook group Daftmill Distillery (Unofficial fans group), those who have supported the distillery since before the first bottle was flipped at auction. It’s purpose is to reward the patience and perseverance of those who may have been unsuccessful or unlucky in the past and enable them to get their hands on a bottle of Daftmill. Long may you continue to open your bottles, drink our drams, swap samples or argue over whether it is any good at all? But to taste the whisky you first have to open the bottle.
Tasting Notes
Nose: a highly appealing combination of cut grass and warm sourdough slathered in honey. Background notes of pale ales, breads, white flowers with pollen and a little youthful calvados. Water unveils a lot more soft and plush cereal aspects along with more breads, toast, butter, yellow plums and some lemon barley water.
Palate: juicy and sweetly fruity up front on arrival. Yellow plums, honey, flower nectars, grassy olive oil and tiny hints of white pepper and clove. An impressively thick and engaging mouthfeel. Dilution softens out the sweetness and balances it with more of these rich bready and biscuity notes. There’s also more floral and cereal qualities once again.
Finish: medium in length and a little sharper and more peppery than usual. Clean, peppery and showing a nicely subtle herbal bitterness.
