Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Optic was grown in our South fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the summer of 2007.
This first fill ex Bourbon Barrel from Clermont KY was the pick of the bunch for Rob Whitehead from BB&R. It was distilled in our Winter season being filled on the 5th of March 2010 and has been bottled exclusively for Berry Bros. & Rudd.

Tasting Notes

Nose: a superb example that shows plenty distillery character but also a maturity beyond its years. A lot of citrus, honey and gentle medicinal and herbal qualities. Beautifully rich and rounded in style. Water makes it slightly drier, but even more complex and elegant with more citrus and green notes of crushed nettle and grass.

Palate: a beautiful concentration of sweet honey and citrus, with balancing notes of ales, herbs and dried exotic fruits. Once again, a feeling of maturity beyond 12 years in this one. Water makes it even more complex, more dried exotic fruits, more fruit teas, more underlying grassy notes and a sense of richness and even waxiness that is deeply impressive.

Finish: long, lemony, sweet and floral. Terrific balance all round.
