Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first fill ex-bourbon barrel was distilled in our winter season, being filled on the 20th December 2010, and has been matured on the ground floor of the warehouse at Daftmill before being bottled exclusively for The Whisky Exchange.
Tasting Notes
Nose: a rather dusty profile, one that’s all about wooden malt bins, heather ales, porridge with honey and freshly bailed hay. There’s also hints of lamp oil, sandalwood and other unusually firm attributes you don’t always find in Daftmill. With water it gathers sweetness and takes on some aromas of eucalyptus and rolling tobacco.
Palate: nicely herbal on arrival, a good balance of dryness and sweetness, with an elegantly bitter and peppery aspect in the mid-palate. Continues with some floral notes, rich cereal tones and more impressions of classic beers and ales. With water it becomes creamier and richer in the mouth, some greener notes of chlorophyll and crushed flower stems, along with buttery oatcakes and turmeric.
Finish: medium in length, but nicely powerful with peppery warmth and clean, bitter herbal notes.
