Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was the pick of the bunch for the BB&R retail team. It was distilled in our summer season being filled on the 2nd July 2011 and has been bottled exclusively for Berry Bros. & Rudd.
Tasting Notes
Nose: green and yellow fruits tinged with subtly medicinal herbs such as wormwood, then honeycomb, olive oil, sandalwood and lime skin. Rich and aromatically detailed. Water maintains this aromatically rich profile, with verbena, lemon thyme, bouillon and buttered toast all appearing.
Palate: a notch drier than the nose would suggest, with firm peppery notes, dry waxes, herbal teas, beers, camphor and putty. Also cedar wood, crystalised citrus peels and faded notes of very old sweet wines. Water reverts everything back to a highly classical Daftmill combination of grasses, bright fruits, sweet cereals and very delicate waxiness.
Finish: quite long, with slightly bitter lemon and grapefruit notes, sunflower oil, putty, vase water and crisp green apple.
