Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was the pick of the bunch. It was distilled in our summer season being filled on the 6th July 2011 and has been bottled exclusively for Taiwan.
Tasting Notes
Nose: dominated by cereals, bailed hay, white and yellow flowers, vase water and and sun lotion. A leaner, drier and more tautly structured expression of Daftmill. A very delicate waxiness, along with some subtle sandalwood notes. Water makes it greener, with more crushed herbs, flower stems, eucalyptus and a few sweet cereal notes.
Palate: surprisingly textural, with leathery impressions, waxes, cooking oils and impressions of rolling tobacco, green tea, dried herbs and bouillon powder. Firm and peppery with an impressive spiciness. Water rounds the whole profile nicely, with sweeter cereal and barley sugar notes, heather flowers, gentle notes of honey and lemon balm.
Finish: gentler on the finish, but still leaning more towards drier aspects such as pressed flowers, pollens and cereals.
