Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was the pick of the BB&R team. It was distilled in our summer season being filled on the 10th August 2011 and has been bottled in Jan 2024 exclusively for the BB&R Ambassador Bars China.
Tasting Notes
Nose: very softly on cedar wood, mossy bark, herbal bitters, dried flowers, coconut shavings, fruity muesli and dried tarragon. Rich and surprisingly complex. Water brings impressions of gorse flower, toasted fennel seed, liquorice root and hay.
Palate: rather a lot of spiciness and influence from the cask, but backed by excellent honeyed sweetness, sweetened fruit teas, mango pulp, dried papaya and banana chips. With water it retains this excellent sweetness, while gaining more dried herbs and flowers, some exotic fruit tea notes and aged dessert wine impressions.
Finish: good length, with a slightly more extractive and spicy profile, leading to an aftertaste full of beers, waxes and sweet cereals.
