Label Notes
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first fill oloroso sherry butt was picked for the Milano Whisky Festival. It was distilled in our Winter season being filled on the 18th December 2011 and has been matured on the ground floor of the warehouse at Daftmill before being bottled exclusively for the Milano Whisky Festival.
Tasting Notes
Nose: slightly sweeter than some of the sibling oloroso sherry butts. More focus on stewed, syrupy dark fruits, some sweetened black coffee and hints of strawberry and walnuts. Water brings out a deeper sense of richness and sticky sweet dark fruitiness. Also more aromatic detail and complexity with herbs, teas and things like bergamot and thyme.
Palate: sweet, rich and showing sticky dark fruits, walnut liqueur and sweet black liquorice. Also strong fruit teas, chocolate sauce and lovely herbal cough syrup touches. Water only serves to enhance these wonderful textural and sweeter components, bringing out more cough syrup, liquorice and aniseed.
Finish: long, thick, complex and balancing fruits with things like dessert wines and walnut oil.
