Label Notes

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first fill oloroso sherry butt was picked for Sweden. It was distilled in our Winter season being filled on the 23rd December 2011 and has been matured on the ground floor of the warehouse at Daftmill before being bottled exclusively for Sweden.

Tasting Notes

Nose: an elegantly dry, aromatic and earthy profile of sherry cask. Lots of damp earthiness, petrichor, tobacco and dried red fruits. Very elegant and deep with good levels of complexity. Water brings more earthiness, a touch more dryness and some big notes of cigar humidor and sultana.

Palate: a rich and well balanced sherry profile, with breads, spices, tobacco and chocolate all mingling together. An underlying syrupy fruitiness add a touch of sweetness and complexity. Water brings out a lovely syrupy texture, a touch more balancing sweetness and deeper notes of sweet liquorice and walnut wine.

Finish: long and focussed on similar flavours of liquorice, treacle, brown bread and chocolate. Remains very well balanced and detailed.
